The Perfect Summer to Fall Transition Meal: Honey Garlic Chicken Stir Fry

Fall is finally here, but we’ve still had some warm weather here and there! This meal is perfect for that transition from warm summer days to the cool and crisp days of autumn.

Today the team tried some new items; including: Honey Garlic Chicken Stir Fry, Paleo Fried Rice, Garlic Green Beans, and finished off with a delicious dessert: Pumpkin Bars!

Red, White and Blueberry Cobbler!

This week we took a little break from standing over the hot stove and enjoyed some cold wraps with side salads and chips (just incase we didn't get enough on the 4th of July). A picture might paint 1,000 words but it doesn't feed nearly as many mouths... Rather than just telling the team what is for Crock-Pot Thursday lunch, we like to make them work for it a bit. Today, we thought that a good ol' fashioned game of Pictionary would be the best way to figure out what is on the menu. So, what was it? We'll let you DRAW your own conclusions...

 Tex-Mex Beef EnchiladasINGREDIENTS2 tablespoons olive oil1/4 cup all-purpose flour (spooned and leveled)1 can (14 1/2 ounces) reduced sodium chicken broth1 1/2 tablespoons chili powder1 small canned chipotle chile in adobo, minced, plus 1 tablespoon sauce from can1 small onion, finely chopped2 garlic cloves, minced3/4 pound lean ground beefCoarse salt and ground pepper8 corn tortillas (6-inch)1 1/2 cups shredded cheddar cheese (6 ounces)1/4 cup chopped cilantro

 

DIRECTIONSMake sauce: In a medium saucepan, heat 1 1/2 tablespoons oil over medium. Add flour and cook, whisking occasionally, 1 minute. Add broth, chili powder, chipotle and adobo sauce, and 3/4 cup water; bring to a boil, whisking constantly. Reduce heat, and simmer until lightly thickened, about 10 minutes.Make filling: In a 10-inch nonstick skillet, heat remaining 1/2 tablespoon oil over medium-high. Add onion, garlic, and beef; season with salt and pepper. Cook, stirring, until cooked through, about 8 minutes.Preheat oven to 350 degrees. (If freezing, don't place any sauce in baking dish. See Cook's Notes below.) Spoon 1/4 cup sauce in bottom of an 8-inch square baking dish. Set aside. Make enchiladas: Stack tortillas; wrap in foil, and warm in oven, 10 minutes. Fill each with a heaping 1/4 cup beef mixture and 2 tablespoons cheese; tightly roll up.Raise oven heat to 450 degrees. Arrange enchiladas, seam side down, in baking dish. Top with remaining sauce; sprinkle with cheese. Bake, uncovered, until hot and bubbly, 15 to 20 minutes.Let cool 10 minutes before serving. Serve garnished with cilantro and, if desired, a green salad.

The Most Important Meal of the Day!

Did your Mom ever tell you that breakfast was the most important meal of the day? Well, our team definitely remembers that lesson! This week's Crock-Pot Thursday Lunch was a breakfast feast including bacon, eggs, toast and sausage gravy and biscuits made by Chris Chase! If "All happiness depends on a leisurely breakfast." then our team's excitement was completely justified. Check out the video to see the joys of breakfast-for-lunch.

Creamy Sausage Gravy with Biscuits

Ingredients

1 pkg. Jimmy Dean® Premium Pork Regular Roll SausageVegetable oil (optional)6 tablespoons flour⅛ teaspoon ground black pepper3 cups milk4 split warm biscuits for serving

Directions

Cook sausage in large skillet over MEDIUM-HIGH heat 8-10 minutes or until thoroughly cooked, stirring frequently. Drain, reserving drippings; place sausage in bowl. If necessary, add enough oil to reserved drippings to measure 1 tablespoon. Return drippings to skillet.Add flour and pepper to skillet; stir with wire whisk until well blended. Cook over MEDIUM heat 6-8 minutes or until browned, stirring constantly. Gradually stir in milk; cook and stir 3-5 minutes or until mixture thickens and comes to a boil.Add sausage; cook 1-2 minutes or until thoroughly heated, stirring frequently. Serve over biscuits.
